That's why we want to share our favorite recipe for a refreshing quinoa salad with you, ideal to recharge on a busy day. This salad is not only easy to prepare, but also perfect for at home or to take along for a picnic in the park.🧺

You'll need:
– 1 cup quinoa
– 2 cups of water
– 1 cup cherry tomatoes, halved🍅
– 1/2 cucumber, diced🥒
– 1/4 red onion, finely chopped🧅
– A handful of fresh mint and parsley, chopped🌿
– Juice of 1 lemon🍋
– Olive oil, salt and pepper to taste

How to prepare:
– Bring the quinoa to the boil in a pan of water.
– Simmer for 15 minutes until the water is absorbed. Leave to cool.
– In a large bowl, mix together the cherry tomatoes, cucumber, onion and herbs.
– Add the cooled quinoa and season with lemon juice, olive oil, salt and pepper.
