
Refreshing quinoa salad – ideal for lunch breaks, at home or in the park!
Lunch breaks are there to recharge your batteries. We also find this very important at Shimadzu! That’s why we want to share our favorite recipe for a refreshing quinoa salad with you, ideal to recharge on a busy day. This salad is not only easy to prepare, but also perfect for at home or to take along for a picnic in the park.🧺
You’ll need:
– 1 cup quinoa
– 2 cups of water
– 1 cup cherry tomatoes, halved🍅
– 1/2 cucumber, diced🥒
– 1/4 red onion, finely chopped🧅
– A handful of fresh mint and parsley, chopped🌿
– Juice of 1 lemon🍋
– Olive oil, salt and pepper to taste
How to prepare:
– Bring the quinoa to the boil in a pan of water.
– Simmer for 15 minutes until the water is absorbed. Leave to cool.
– In a large bowl, mix together the cherry tomatoes, cucumber, onion and herbs.
– Add the cooled quinoa and season with lemon juice, olive oil, salt and pepper.
